Potato Salad

Is there anything else that screams summertime like a nice cold potato salad on a hot summer day? Along side some BBQ hamburgers, potato salad is a true classic.

Potato Salad:


3lbs new potatoes

4 green onions, chopped

5 radishes, sliced

3 boiled eggs, peeled and cubed

½ cup Mayonnaise

1 tbsp Dip Mix (Rijke’s Signature Spice Blends)


  1. Peel potatoes, cut into pieces. Place in a pan with water covering half the potatoes. Bring to boil over high heat, then reduce to medium until fork tender and drain.

  2. Slice green onions, radishes and boiled eggs.

  3. Once potatoes have cooled, add green onions, radish, eggs, mayonnaise and dip mix.

  4. Mix, refrigerate to cool completely and enjoy!
